Once upon a time, we were both college students living in a basement apartment of a 95-year-old woman, pretty broke, and having to be creative with what we had. So one night, while the hubby was at work, I pulled out these ingredients and made something I’d never heard of before.

You see, I was never a good cook or bake before I was married. Weird, right? Usually, the woman in the relationship is the one who cooks, cleans, and all those homemaking attributes. And she’s the one who brings that into the marriage, til’ death do they part, forever and ever.

Not me. I was a strict mac-n-cheese and frozen corn dog kind of gal. Until my main squeeze came along. He taught me the cooking trade, and I started to gain confidence in my abilities, and this recipe was my first baby. Made all on my own. My first little masterpiece. Breakfast for dinner…. Or breakfast for breakfast. 😉

Ingredients:

4-6 slices of bread

5 large eggs

1 package of Jimmy Dean Maple flavored sausage

1-2 large sweet potatoes

Coconut oil or butter

Cinnamon

Instruction:

Start by heating up the frying pan with about a tablespoon of butter or coconut oil. Chop sweet potato(es) up into small cubes (like hash brown cubes), and place them into the pan with oil. Cover on high until sweet potatoes soften and caramelize. (I will add a pinch of salt and pepper here)

Add package of sausage to the pan when sweet potatoes have softened, and work into a hash with the potatoes. Add more butter or coconut oil if needed.

In a separate bowl, beat eggs together and add cinnamon to make a french toast mixture for the bread. In a separate pan, fry french toast slices and let cool on a plate. Once you’ve used about 4 to 6 slices (depending on how much hash you would like) add remaining egg & cinnamon mixture to the sausage and potato pan. Mix until well cooked and sausage is no longer pink.

Lastly, tear up french toast slices into bite sized pieces and fold into mixture. Whether in the pan or in a separate bowl, however you’d like to serve.

Dish into a bowl or on a plate, layer a little extra maple syrup on top and dig in.
